I also just recently started working/learning cloud solutions and from what I understand, you are not using any statistical models or machine learning for extracting data from email. So, I would suggest to think about leaning SQL and after look into [coursera data insights] (https://www.coursera.org/specializations/from-data-to-insights-google-cloud-platform).
I myself came from statistical background and knew python fine enough to do some statistical analysis. However, SQL is a monster for basic (non-statistical) data analysis and cleaning in comparison to python.
