They're not books, but you might be interested in these two Coursera Massive Open Online Courses (MOOC) on terrorism:

I've done the second one (in addition to having done a course on terrorism in my undergrad) and can attest that it's a fairly good overview. The syllabus will include readings which are aligned with what you are looking for, and are publicly accessible. I found the last part, public/government response to terrorism, the most interesting, as it seems to be Dr. Bakker's area of specialty and fairly cutting edge as far as terrorism studies goes.
These will also probably look good on any university application, as they show an initiative to study topics you're interested in beyond what is expected of you.
I'm sure if you poke around on Coursera you can find MOOCs relating to the other areas you mentioned, though I would warn against over committing yourself.
