Once you understand even the most basic fundamentals of physics, every video of the collapses become obvious proof of controlled demolitions.

Not a book but I found Physics 101 on Coursera to be an incredibly helpful course. It's short, the questions are good, and the professor delivers amazing explanations (he works at Rice for a reason). The only downside is that it doesn't cover the entire uni physics curriculum, but it still makes for an excellent beginner's course.
