For electrical engineering that means nanotechnology - here's a short course that might help - part of the 'Master of Science in Electrical Engineering degree at University of Colorado Boulder'

Take those and put them on your CV, you will stand out and are far more likely to get interviews - I had an interview for a sys admin job once, 90% of the interview was us talking about the Linear Algebra Course by Gilbert Strang and an AI/ML course I did: https://ocw.mit.edu/courses/mathematics/18-06-linear-algebra-spring-2010/
Do that for the next 3 months(8 hours a day, 5 days a week - getting a job, is a job). If you don't have a job by then, you need to consider things like:
- a different starting job - can you get a job in another industry(I work as a SWE, but my colleagues have degrees in everything from nanotech to maths to X etc)
- Moving, if opportunities are slim where you are(as there were in my home town) - you need to think about moving, or again, changing your career.
