Coursera has two intro Chinese classes from National Taiwan University: Learning Chinese : Start From Scratch and Intermediate Chinese. There's also a lot of materials for overseas Taiwanese here and here. The sites are completely in Chinese, so you'll need your girlfriend to help you navigate. You can also look into getting books from the Mandarin Training Center at the National Taiwan University.
