It is a bit strange that your classes were stopped. I teach "Basics of AI and NNs" course at a uni and I continued my lectures and students made their term works while staying in touch online.

I would concentrate on Coursera in your case, but maybe on more computer vision courses if it is a topic of your choice.

There are some more dedicated ones as, for example:

And spend some time on math also, you will eventually hit a barrier that cannot be surpassed without sufficient math knowledge.
